For all the passengers and most of the crew, the first they knew was feeling the collision with the iceberg. A few of the crew -saw- the iceberg ahead and tried to avoid hitting it, and they knew a few seconds before anyone else.
They turned the ship to try to avoid the iceberg. It is thought that they might have been better off if they'd run straight into it. As it was the iceberg slid down the side of the ship, slicing it open, opening several of the waterproof compartments. If they'd hit it head-on, the ship would have been seriously damaged, and some people might have died, but the ship might not have sank.

The captain etc knew well before the passengers because they tried to shut off the bottom of the ship were it was flooding. Therefore the crew members who were working in the bowels of the ship would have known when the water poured in.
Everyone on board would have realised the ship scraped the iceberg. AKA film those on board saw the iceberg too close to the ship if they were on deck. I think the first time anyone though "oh ****" would have been when the ship began to list.
That is my opinion. There is plenty of information on the net about the titanic.
Remember though the majority thought it was unsinkable so even when they were in the lifeboats some would have thought it was a load of old nonsense.

Well, for Crew, I would say it was when the Capt decided to plunge full speed ahead into icy waters;
or possibly when the lookouts spotted an iceberg right in the path of the ship
but for most- it was when they hit it and the ship started to shake and shudder.

I guess when they looked out their window and saw an ice berg starring them straight in the face.. any noises etc would of been downplayed by the crew to avoid a panic.
that might be the reason why people were reluctant to take any physical signs of abandoning ship (get life boats out etc) seriously.

Almost certainly when they heard a very loud bang, acommpanied by an almighty judder. Followed by an extended scraping and rending noise as the iceberg ripped the hole in the ship's side.
The captian saying "What the f*** was that?" may also have been a clue.
