Or do they just know not create conflicts for football fans by having Satuday for college, Sunday for pro, etc.

pretty much...sticking to the saturday/sunday avoids conflict

There is an agreement that the NFL will not play on Saturday and conflict with college games. Likewise, college will not play on Sunday and conflict with NFL games.

but Saturdays NFL games normally don't start until college raps up, it's not good to have your market split, and down south College is more important then Pro ball, whereas up here in Boston, BC's ranked #2 and they might get an hour on most TV sets!

I think TV and Vegas has more to do with the scheduling. Vegas was responsible for the Thursday, Friday college game. They want people to have the opportunity to bet every night of the week.
