Can my boss who has his company 500km away from his other company that i work see what i'm doing in my computer? today he phoned me and told me that he "saw" that i opened the mails of the company in the outlock. and then he said to leave my pc open till tomorrow.
Is it possible that he is watching what i'm doing in my pc (for example chatting to skype)? or is impossible?

It is unclear where you are doing this. Is it at work? Then yes, he can watch what you do on your work pc. All internet activity can be kept track of by the IT department.
