Can my boss who has his company 500km away from his other company that i work see what i'm doing in my computer? today he phoned me and told me that he "saw" that i opened the mails of the company in the outlock. and then he said to leave my pc open till tomorrow.
Is it possible that he is watching what i'm doing in my pc (for example chatting to skype)? or is impossible?

Yes, because he has a hidden keylogger in your PC. Depending on the keylogger, any and all data can be transmitted to a special server where your boss can retrieve.

It is unclear where you are doing this. Is it at work? Then yes, he can watch what you do on your work pc. All internet activity can be kept track of by the IT department. If you are worried about him looking at your home activity, you need to make sure you have a security system such as a firewall enabled on your home pc. However, I wouldn't be opening company emails at home if you are going to get in trouble for it.
And don't chat at work! The majority of employers do not allow that.
