If your water temperature indicator (dial) goes up and down then your water temperature SENSOR is bad. It is fairly easy to replace (and cheap).

Usually stuck thermostat will make the engine over heat (stuck closed) or the car engine will never warm up (stuck open). This does NOT seems to be your case.

As for the water temp sensor, usually the parts are cheap (my Audi sensor only cost me $8) and didn't even require any tools. Most other cars will require about 1/2 to 1 hour of labor cost (on top of parts cost).

Good Luck.

It could be. It can also be a bad water pump. Have you checked the coolant level lately???
