It didn't, it's a myth created by Coca Cola as an advertising ploy. Very clever because people still fall for it today. Father Christmas has been shown wearing red & white in pictures, cards & postcards decades before Coca Cola hijacked the idea.

Santa Claus has a suit that comes in many colors depending on the country. The most common depiction (red with white sleeves, collar, and belt) became the more popular image in the United States in the mid-to-late 19th century. Images of Santa Claus were further cemented through Haddon Sundblom's depiction of him for The Coca-Cola Company's Christmas advertising. The popularity of the image spawned urban legends that Santa Claus was in fact invented by Coca-Cola or that Santa wears red and white because those are the Coca-Cola colors. In fact, Coca-Cola was not even the first soft drink company to utilize the modern image Santa Claus in its advertising – White Rock Beverages used Santa in advertisements for its ginger ale in 1923 after first using him to sell mineral water in 1915. Even though Coca-Cola was not the first to do this, their massive campaigns was one of the main reasons for why Santa Claus ended up with the red and white colours, in contrast to the variety of colours he had prior to the campaign.

An Advertising Executive’s Christmas tale (an urban myth)
“It is easier for a camel to squeeze through the eye of a needle, than to sell Cola in Winter! Nativity scene? Too holy. Holly, maybe? Nah! Too prickly. Wrong image. Holly. Jolly. … That’s it! Jolly! Ho, ho, ho!!! Where’s my Christmas file?
“Eugh! There’s more in this old box than I thought; this could take a while.
“What’s this one? … ‘T’was the night before Christmas…’ Good, good. But the guy in this story is too short – he needs more presence. We can kill two robins with one snowball here, let’s see. What’s this lot? Nice images of a jolly Christmassy chap; but boy, is it confused! Kris Kringle, the two foot dwarf, and Kris Kringle as Robin Hood without his … what’s this? Yes! This Thomas Nast drawing in Harpers and Queen – nice and chubby! Red and white – just the right colours for the brand. I like the beard too. North Pole, toys, oh yes! Let’s go for it. Pencil. And red. Where’s my red paint?

“…and so, gentlemen, I give you ‘Santa Claus’! If you will look at these illustrations we have a jolly, round figure – the very spirit of Christmas if you will – holding a bottle of cola; and in this one he’s drinking it; and here – giving cola away as a Christmas present. Gentlemen, with these I guarantee you will never experience a winter drop in Cola sales again! I give you – the Sundblom Santa Claus!
