How serious would the consequences be if I wrote a bit more than that? (like around 800 words)

800 shows that you can not organize your thoughts and be concise. It may not hurt you but it will not help you.

You can often go up to 10% over (so 550 in your case) without causing problems, but 800 is way too long. If you submit your essay online, you may not even be able to fit that many characters into the field. Trim it down; you'll be surprised at how much you don't actually need.

It may not be in your favour.
But a recent study founded that the higher the words, the more possibility of someone getting a higher score in essay.
However, yours is too long.
My only guess is that they may check the first 500-600 words, and leave the rest.

That isn't a bit more - that's almost twice as much. If it were 530 words, they wouldn't object, but 800 indicates an unwillingness to follow directions. It wouldn't be looked upon kindly.
