Because you can't roll a square, triangle, heart, etc.

If you mean wheels, there are no other shape but round. If you are referring to cylinders where the pistons are, round is the most efficient shape for size and manufacturing. No angles means less to catch on things as well as minimizing cracks. If you mean steering wheel, it can be any shape but round is the best to work with.
