I don't know , I usually field dress mine and leave the guts for the dogs before I take them back to the cabin and roast them.

Elf's have a diet that consists mainly of cinnamon and tea so that accounts for the cinnamon taste. The glitter I cannot explain. Are you sure it just doesn't look like glitter?

First off, it makes me laugh that people are even remotely offended by this question. I didn't know that it was actually offending real-life elves and their support groups!
Anyhow, I have to say it's because it's what they cannot digest. Since you are eating the guts and normally by the time food gets to our intestines it's the items our stomachs can't digest and our body no longer needs, I'd say that the elf anatomy cannot process glitter and/or cinnamon.
Since they probably live in gingerbread houses, I'm sure that cinnamon is a common spice. One that while they love it (much like wheat gluton), they can't possibly digest it.
Why glitter? It's cuz they're crazy! Crazy little elves!!

because elf guts function by pumping glitter through the elf's vains (makes that earie sparkly glow), and the elf's cinnamon taste comes from it's usual diet of sugary treats. the cinnamon is stored in the guts

well you see, the elf diet consists of 4 main food groups. candy, candy canes, candy corns, and syrup. candy, candy canes, and candy corns all contain the compound glucose , which, when processed through the elfin digestive system produces the compound sulfhydroxide triglycerol disacharride. this compound (STD) is absorbed into the elfin body and reacts with the taste receptors on the human tongue, sending a message to the brain which makes it think that the substance is happy and sparkly. syrup contains carboxyl groups, which give cinnamon its sweet/bitter taste. the syrup forms a thin layer over all of the inner organs of the elf.

Because we are what we eat. Girls's elf guts taste like sugar and spice and everything nice, and boy elf guts taste like snips, snails and puppy dog's tails ( little known fact)
