What are the pros and cons of doing that. I don't care much for speed. I care more for safety and better grip on the road. What is best: keeping it factory size or go bigger?

You can spoon a 190 onto your rim. The problem when you do this though is that the handling will be different, especially the roll-in going into and coming out of corners because of the wider contact patch. In my honest opinion...the slightly larger tire will have no benefit whatsoever, whether it's for street or track. Stick with your 180. If you're concerned about grip make sure you buy one of the ultra premium tires from Dunlop, Bridgestone, Metzeler, Avon, etc. As far as safety goes...well that's something only saddle time can teach you.

A 180 rear tire has all the grip you need for ANY riding situation. If you're slipping around, try adjusting your suspension properly or learn to ride smoother.

A good rider on touring tires can outcorner a squid on race rubber, so a 190 won't do you any good if you can't use a 180 to its limit. All you will do is add weight and make the handling slower.

If you care more for safety, keep the factory size.
How your tire grips wouldn't change much, but handling would.
