Say I want to crete a sort of spiral of space-time or a time funnel/spiral [whatever you want to call it]. Or just warp space so it's bigger in front of you and smaller behind you .This would cause near instantaneous travel over many light years. But it would be difficult getting it to stabalize and have all your atoms put in the right place.

I have done this. One needs only to take a General Electric microwave oven and push as many buttons as possible at the same time.

It sounds like you want to create a wormhole. The only way I could think to do this (using real-world physics) would be to pray. We don't know how to do it in real life.

In sci-fi, a wormhole is usually either a naturally-occuring event or something created by sending a tachyon beam at a singularity (typically the weakest portion of space you can find. Ie, low in gravitons primarily), tearing a hole through it and tunneling through subspace.

The trekkie answer is that warp one is a million^3 = a million = gentle velocity; warp 2 = 2^3 = 8 x gentle velocity; warp 3 = 3^3 = 27X gentle velocity. in fact, no person is conscious if warp engines are achievable or what sort of rules they could obey in the event that they did exist

Aside from the stability issue, a wormhole is a static solution to the equations of general relativity, but there is no known way of a system dynamically evolving from conventional space into a large wormhole that would do what you want. In other words, it could exist once built, but can't be built.

Appearantly it occurs naturally with black holes which have so much gravity they actually bend light! So all you have to do is start a fusion reaction, speed it up, hope it super novas and sit back and disintergrate.

hmmm, I think you'll have to create a portable black hole for that. Just project it in front of the ship and don't forget to figure out how to turn it off when you're done traveling.
