The most popular reason for the Crusades was the control of the Holy City of Jerusalem. It is the center for the three largest religions, Christianity, Judaism, and Islam. The one in control gets to build their temple/church/shrine.
Secondly, there were a LOT of knights and other fighting men in Europe at the time, and no wars. So they had a lot of time on their hands, and the church as well as the nobility saw them as a threat to the established order. The Crusades became a way to employ them elsewhere.
