Umm, lots of things:

1. Temperature--in general, the reaction rate will increase as temperature increases, and vice versa. There are exceptions to this, but they're rare.

2. Salt concentration. Most enzymes have an optimum salt concentration and activity falls off on either side.

3. pH. Same as in #2 above.

4. Cofactors--certain things, like metal ions, some vitamins, etc., are required for the enzyme to function at all.
