There are numerous health, social and conscience reasons. Strict vegan diets are not found to be healthy and are unnatural and are associated with emotional disorders, including obessive-compulsive disorders. But, reducing red meat in the diet lowers cancer and heart disease rates. And, there is legitimate concern over mad cow disease. Socially, eating lower on the food chain, more grains and plant energy than meat, is beneficial to society and the global ecosystem in that it is easier and considerably more economical to feed the world with less environmental damaging and energy expensive production and consumption than by eating off the top of the food chain. And, in matters of conscience, humans can feel uncomfortable with consuming animal energy for philosophical / religious reasons and dogmas, although there is an Earth Muffin sort of discrimination in that of respecting only certain "sizes" of animal life. While supposedly respecting a chicken, for example, the same person feels no pang of conscience in using antibiotics or antiseptic soap or washing bacteria off their teeth, bodies and clothes or using pesticides that slaughter trillions of life forms or using automobiles and computers and such which have animal byproducts in them.

3. Also falls under religious reasons but it's easier to keep Kosher or Halal if you're vegetarian.

4. Health - vegetarians tend to eat more vegetables and consume less fat.

5. The Environment - vegetarian diets produce less carbon emissions than meat eating diets due to the extra work and energy involved in producing meat.

6. They just don't like the taste of meat.

7. Certain medical conditions and/or allergies.

Other than health reasons?
Let's see: It will drive your parents insane until they discover that if you get hungry enough you will learn to cook for yourself.
It is a good way to keep people from mooching if you don't have food they like.
Your parents will not stay for prolonged periods as they will prefer a cramped motel over the warmth of your home where they presumed you might cook a meal or two in gratitude for the thousands they cooked for you before becoming a vegetarian.

Reasons AGAINST those above (in case you need to use them at all).

Some people are vegetarians because of their religion. Another reason is that vegetables are faster and easier to digest. Vegetables "scrub" the intestinal walls and rid them of harmful substances. Vegetables make excellent snacks as well as main meals, can be eaten raw as well as cooked in many different ways, and are not fattening or salty (unless fatty/salty ingredients are added to them). Vegetables don't clog the heart or the arteries, or contribute to cancer. Finally, vegetables prevent the strain, pain and bleeding of constipation.

When you see the barbaric ways that animals are treated and killed it's hard to feel the same way about meat. It's the same reason I would NEVER wear fur. When your educated about a situation it's easier to make a decision.
