the planet, how would that look like to an planet-based observer? Would the nose simply finish over the horizon or would the nose appear to curve up into space?

curve. due to Einstein's theory of relativity.

the tip of the nose would be moving faster (covering more distance) than his body . so it would travel in time slower than the rest of him.

(lets say there IS gravity) also it would be existing in a lower gravity area than the rest of him which will alter the way time flows for the tip of the nose as well.

Yes.

Edit: this actually gets to be an interesting question once one gets past the Pinocchio premise. Any straight line projected into space will appear to have an end at some point on the celestial sphere, and I believe, would seem absolutely straight, no matter how long it is. Even if it is infinite.

The reason? The greater the distance, the more the line is foreshortened by perspective. The infinite line would appear to have an end point at some celestial coordinate because of being foreshortened.

It's like imagining a point that moves toward a wall, decelerating in such a way that every second it moves half the remaining distance. It will take an infinite number of steps to reach the wall, IOW, it will never get there. But the wall IS an easily defined limit of that sequence.

If there was NO gravity, how is he still on Earth? What holds him down with NO gravity? The sun wouldn't hold isn't going to hold us enough. I think you would mean a LOW gravity. Even the moon has some pull. So with NO gravity he would be in space and dead from a lack of breathable oxygen.

If there was no gravity, unless Pinocchio was wearing gravity boots, he'd be floating off in space and would spear the moon on that lying nose of his.

It would probably curve because the fabric of the universe is spacetime, which is curved.

As much as you could see it, it would look straight. I'd say it would not be visible very far due to being so small.
