Crude oil goes through a distillation process. Distillation means that the oil is boiled in a reflux device so that the different constituents of crude oil come off at differing temperatures. Diesel, kerosene, gasoline all have different boiling points. For example, you may only heat the crude mixture to a certain temperature where gasoline evaporates then condenses in a separate part of the distillation device.

Oil does not not start from fossilised remains it starts from organic material - trees etc.
All it takes to form oil is the right combination of pressure and temperature. It does not even take a long time. Researchers have produced oil in just a few years.
