It doesn't watch anything? It doesn't tell time? And it really isn't a cap at all, more like a stretchy head covering for your ears to stay warm in winter?

As part of a Navy 'work uniform' -- that cap was worn while standing watches (sentry or other assigned work tasks) hence watch cap. Civilians use them to keep their packet clocks warm.

IN my opinion, it was the Navy, they gave you a Pea Coat and a cap. And the guys used to wear both to stay warm while standing watch. thus the term watch cap began. Makes sense to me.

It's a woven wooly cap worn primarily by sailors initially - watch cap because they pulled it on to keep warm when they went on deck for WATCH duty.

I always enjoyed watching sailors in watch caps. But I guess that doesn't answer your question. It was because they wore them on watch as stated above.

THE WATCH CAP I KNEW WAS A CAP WITH A FUR PULL DOWN FOR COLD TO COVER YOUR EARS.
THE WATCH CAP WAS WORN BY THE MILITARY PERSONNEL DURING THERE TIME OF WATCH. (GUARD DUTY)

THUS IT BECAME KNOWN AS A WATCH CAP. WORN DURING THE TIMES OF WATCH(GUARD DUTY) ESPECIALLY AT NIGHT AND DURING COLD WINTER MONTHS.

WE ALSO WORE A HELMET LINER, PAINTED OLIVE DRAB, DURING THE SUMMER MONTHS WHEN IT WAS HOT.
