since there is not a big demand for horse care givers like riding instructors, boarding, horse trainers etc, I recommend you become a vet technition to work with a horse vet or become a horse vet (which is very involved time and money wise like 8 years) also there is always a need for good ferriers.
becoming a working student, like a guy I know, requires knowing someone in the right place. but that can pay off big dividends because you work off yoru training and eventually you can show high class horses, become a certified trainer for dressage riders or competition riding.
horse breeding would work as long as you were focused on high class horses that are not that abundant in areas where those type horses are very popular. in california they have friesians, andalusians (now called iberian) paso finos pervian pasos fancy colored horses that go for alot of money. in my area that is nto the case people here are not as interested in animals or high class animals when they are interested.
but your best bet is the veterinary field of some sort or ferrier. if you live in an area where horses are not a passion for the communities or people with little money.
you might takes some classes at a college that deals with horse husbandry. they can advise you best on jobs that are in demand, of course do some research too, as they might be inclined to lie just to get your money.
