My signature dish is chicken marinated in olive oil, vinegar, a couple shots of rum, orange peels, and cilantro. Then the chicken is baked and about fifteen minutes before it is done baking, I pull it out and add a layer thinly sliced ham and a heaping amount of Parmesan cheese. Then I let it continue to bake. Wallah... once the buzzer goes off it is ready to serve.
(P.S.) For all those who did not know, I recently learned that adding some coke to the marinade will help the chicken absorb the flavor better. I thought it weird when I first heard it... but it works quite well.

Is the recipe to be cooked in advance, or prepared at the site? That is a big factor, determining the possibilities. When I don't know, then I bring a finger-food style dish or dessert. Also, it depends on the theme, holiday, and time of year. Will it be eaten outside? Unable to be refrigerated? I love preventing salmonella poisoning!

Baked chicken thigh wrapped in bacon with colcannon potatoes and steamed vegetables.
Easy to put together - you can set most of it up the day before and it's pretty close to impossible to screw it up.

I don't have a name for it, but it's a chicken/sausage/cheese/broccoli combination with peppers and onions, all baked into a bread. I just experimented one day, and hit on it, and it is really outstanding.

Cinnamon rolls, I always make them this time of year. I learned how to make them in Home Ec in 7th grade and I still have the original paper with the recipe, I friggen love them =]
