The very basics are you take two different varities of corn and breed them to get a seed that will be different than both the two varieties you planted. How this is normally done is plant rows of the two parents next to each other and remove the tassel of one of the varieties to create a all female plant. A corn plant has male (tassel) and female (silk) parts. Pollen from the tassel on the second plant will pollenate the silks on the ear of the first plant. The seeds of that plant will be a hybrid. The diffence will be shown when that seed is planted and grows.

Like all hybrids it is a cross of two varities. To produce hybrid seed, the two are planted close together. When the pollen heads start to develop the are cut off of one of the varities so only pollen from the other is available. Then the one that has had the pollen removed is harvested when mature as the hybrid. It is important which one is the pollen source too. Seems a little odd maybe but it is very important. Corn is easier to hybridize because the pollen devlops at the top of the plant while the female flowers are seperate.
