Timers count down a certain predetermined amount of time. Like if you need to bake something for 25 min.
Stopwatches time how long something takes.
Press start. Run a mile. Press stop. Now you know how long it takes you to run a mile.

I don't know about your phone model, but a timer, usually counts down to zero from a set time. A stop watch starts at zero and continues until the operator (you) stops it.
