I wanted to send them to a great dinner and then put them up in a nice hotel for the night. I'm assuming something near the ocean in Laguna or San Clemente is nice. Any suggestions of restaurants and/or hotels???

Palm Springs area have great restaurants and hotels. If they golf get them a vacation package that includes room.golf,spa and dinner. For a weekend your cost will be around $600-800. And don't forget to give them a gift of silver for their 25th.
