Does anyone know how to take the little things out of the guitar where your strings are put in like this?

On my guitar they pull out straight.
Just poke underneath (carefully) with the head of a screwdriver. But only if there is no tension on the string.

To my knowledge, and it depends on the guitar that you have, if you are trying to restring the strings, they should unscew just a little bit, enough to get the string in there. Good luck :)
