They're pretty different.

As a warrior most people will expect you to tank, since they're one of the few classes that can do it.

Rogues have the highest damage output in the game against a single target

In PvP both classes are equally scary. Warriors seem to be one of the favorite classes for Arena, since they have their Death Wish, Mortal Strike Combo.

Rogues on the other hand have stealth, and when specced right can very quickly dispatch clothies like Mages and Priests.

At 70, the versatility given to warriors in terms of PvE raiding is much greater than that of rogues. The tank prospect is there, of course. On the other end of the spectrum, speaking here from personal experience, there's an Arms warrior in our guild who regularly outdamages not only the rogues, but also the mages and warlocks, in Karazhan and Zul'Aman raids.

In PvP, my experience is a little more limited. I do mostly 5v5 Arena and regular Battleground PvP, alternately playing a 70 feral druid, 70 elemental shaman, and 70 holy paladin. All those toons can survive most rogue attacks - but a Mortal Strike warrior, forget it.

However, in terms of leveling, I'd take a rogue any day. Things like Sprint and Vanish are a tremendous asset at low levels, and until at least level 40, a rogue's ability to kill nonstop is much greater. Not so much depends on gear and food when leveling; rogues are just brutal killing machines.
