You need two apple trees for cross-pollination. They are not male and female, you just need two trees.

As for avocados, they have flowers that open twice, on two successive days. The first day the pistil is receptive and protrudes from the flower; the second day the pistil is no longer receptive, and the stamens shed their pollen. So they are both male and female on the same tree, but sometimes they are not synchronized so the flowers can pollinate each other, so you may get spotty pollination, or none at all. It is best to have two or more trees if you expect enough pollination to get fruit.

It takes 2 apple trees to produce fruit. Probably the same for the avacado, but I'm not sure.

Avacado trees are either male or female. Obvious you need a female for flowers, eventually fruit, and a male to polinate the flowers.

Avocado trees are male or female. You might have a male. Apple trees usually are both male and female, but often won't produce fruit unless "cross-polinated" by another apple tree.
