Coolant is full and there is no gauge in the car for over heating I am not sure what to do it only does it if I am going over 35 or so.

you must have some type of oil leaking on the exhaust pipes under the hood, I would venture to say you need new valve cover gaskets or at least tighten the valve cover bolts down to see if it cures your problem.

First thing to do is go to a do-it-yourself car wash and shampoo your engine clean!!! Any leaks should easily show-up when your engine bay is clean. On these engines there is a tendency for the gasket seal to break where the intake manifold attaches to the cylinder head. Only real cure is to replace these gaskets with better ones. Sometimes the leak is internal and sometimes external. Higher speeds cause pressures of all fluids in engine to change. Call NHTSA to see if your engine has a "secret" recall for this problem and what GM is willing to do about it.

Is it power steering fluid, transmission fluid or just spilled oil on the exhaust manifold?
All of these thing can cause smoke to come out from under the hood of a car.
Not to mentions someones dead cat cooking on a manifold.
