Between those two -- U of F -- by a wide margin.

To put is in baseball terms, University of Florida is like a major league team that never makes the playoffs -- and Miami is like a minor league team in the double-A league.

Both colleges have great research opportunity, my professor (phd from UFl) said the Chem/Biochem (at least for the graduate studies) has some really cool things going on right now that will be making some pretty big impacts in our lifetime. Both UFl and UMiami have undergradute research opportunities and UMiami is probably going to be a better bet if you want to do anything dealing with the ocean.. but just remember both schools are great and both will offer you a great education no matter what you choose. I might be transferring to UMiami next year! If you are out of state UFl is a longshot so def. have backups.

A lot depends on your field. Pick the professor; that will indicate the school. I might add that Miami has the reputation of being a party school.
