"was" is the singular past tense of the verb 'to be' whereas "were" is the plural.
"I" is first person singular so requires the "was". "Were" would be used for second and third person plurals such as 'we', 'you' or 'they'.

In other words :-
I wish I was rich
he wishes he was rich
we wish we were rich etc.

'I wish I were rich' is correct. When it is only hypothetical and not real, 'were' becomes a correct word there.
