The 305 in your Trans Am is indeed a Chevrolet small block. Yes, the 350 and the 383 Stroker are also Chevy engines, as well.
You COULD just install a 350 or a 383 stroker. But I would recommend a few things first. With a 350, and especially a 383 stroker engine, there will be more horsepower and more torque. Therefore, more strain will be put upon the rather weak frame of the T/A. Unfortunately, the Camaros and Trans Ams did not have strong frames during the 1980's.
You could reinforce the frame in one or more of many fashions. Probably, the least expensive way would be to install subframe connectors and traction bars. This would beef up the chassis, and would help prevent flex under hard acceleration. Or, if you have the money for it, you could install a roll cage into the car. This would also help strengthen the frame.
The transmission that is currently in the car will probably do allright- but if the 350 is a high performance engine, it will be too much power for the clutches in the transmission. Is the transmission stock? You will want to have it rebuilt for high performance, and install a large transmission cooler on it, as well. A machine shop can build up the transmission- or you could purchase one already assembled and ready to install for perhaps 1000 dollars or less. You could go with a 700R4 transmission, which is essentially a four-speed auto. Or, you could use a TH350 or a TH400. The 400 will handle more power and torque output.
You may want to add a strong rear end. If you want to accelerate quicker, install a 3.08 or a 3.73 posi unit.
Also, the driveshaft may need replacement.
The brakes on the car will need to be beefed up some.
And you will also want to install a cooling system that will keep the T/A running cool. You could go with a large capacity brass radiator, say a 4-core type, or a more expensive aluminum racing radiator. BE COOL manufactures excellent aluminum radiators. They are expensive, but they work extremely well.
Address every aspect of the cooling system. Make sure the lower air dam is in place underneath the radiator. Also, you could use an Edelbrock or other brand high volume water pump.
And finally, with some other odds and ends, you will be ready to install your new engine. A 350 is excellent. A 383 stroker is even better. With the stroker, you will have more horsepower and more torque, generally speaking, as compared to a 350- and certainly when compared to a 305.
Good luck!
By the way- you didn't mention your budget. You can do all of these things I mentioned above for about 5K to 10K dollars. If you are on a tighter budget, you may have to make a few compromises. But if you can afford it, build your Trans Am well, and build it right. That way, it will last longer, and will be more reliable.

If you want to take the time and money, you can put in a GM 383/450 hp, but it won't be easy or cheap. It will be a good ride though. The 305 and the 383 are both GM engines, but keep in mind MOPAR used the 383 CID designation during the muscle car era. That too was a good engine, but it was classified as a big block. The engines you mention are small block. Good luck with it.

I have a 91 gmc that did the same thing. I took it by the car lot that I bought it from. They unpluged the little hose that went to the EGR valve and it started running smooth again. If your standing at the passengers fender looking at the tbi its a little (1/8") plastic tube thats going from the passengers side ,center to the rear. You can pull it out with your fingers , if it doesnt help stick it back. This was 2 yrs ago and it still runs great.
