Any size will do, but keep the dimensions.
A square piece of paper needs to be really square, the corners an exact 90 degree, not just like it.
If you work with rectangular paper sizes the diagrams will give the sizes.
I have paper from 2 cm square to 40 cm square, all special origami paper.
I think 20 cm or 8" square is a good beginners size, for simple models or when you have more experience 10 cm or 4" will be a nice size.
We often use the 10 cm square note paper for testing a new model before we get the expensive origami paper out.
Not as nice to see, but cheap and most brands are perfectly square.

I've seen 4" square, 6" square and larger - if you are new to origami, try the biggest you can find as it's easier to see what you're doing. Good luck!

I use A4 format, when folding to half diagonal you get square 21*21 cm and 21*8cm for any small detail
