I have purchased a top of the line dishwasher, hoping it would reduce the need to rinse but every time I leave even a few dishes without rinsing the others come out with powdered deposits. I have used jet dry with the same results and don't want to use it any more for health reasons

Use Cascade Complete gel.That's what I use and have never had any residue...

Well, I just have a regular dishwasher, not top of the range, and my dishes come out sparkling. I never pre-wash or rinse them. I just put them in, and then run it overnight. Even if I leave it two days, everything is mostly fine.

The problem is likely to be with the sort of powder you are using rather than the dishwasher. Firstly, you might be using too much - try reducing the amount, and see if that helps. Secondly, you do need to use both dishwasher salt and rinsing agent in the correct places, and make sure they're set to the pH of your water. Harder water needs more dishwasher salt than soft water. If you don't have enough, the residue could be from your water.

Try using the dishwasher gels, instead of the dishwasher powders. I get much better results with the tranluscent gels, than I do thte powders or chalky paste formulas, or the individual blobs. My favorite brand? Electrasol

Also find out the cycle sequence of your machine. Some dishwashers are too frugal with water and only final rinse the dishes twice. You may need to do an extra rinse.

I understand what you mean about not wanting to use rinse-aid. I stopped using it too.

I think the key to clean dishes in the way you load the dishwasher - Try not to crowd it. And use the right amount of detergent for your water type. A tablet may do some people but it is not one size fits all. -Trial and error!

I don't think such a product exists and I have tried everything in the last 25 years! If you find one that works please let us all know! And please remember, the rinsing we all complain about is a whole lot faster than hand washing!
