A couple things come to mind... Veterinary science, conducting medical/drug testing on animals (hopefully all done humanely), studying biology of ecosystems, studying how livestock convert food to meat and I am sure there are plenty of other opportunities.

Many zoos are becoming involved with endocrinology research. Most of it focuses on reproductive endocrinology to help save endangered species, and stress hormone studies to help assess captive animal welfare. The captive environment provides fantastic opportunities to study species that could not be studied so closely in the wild.
