Well Dogg your close but barely on the target. Try to find a real nice 72 CB750 for $2000. A new seat for one of them is over $300 alone. Your not gonna get anything but complete junk for $200, and it will never rride again. They, like Kaw triples, are heading through the roof, and the best examples are going home to Japan. I wouldnt sell my 72 Gold CB750 4 piper for $2000 unrestored. T500s, T20s, Drum brake GT750s all many times the sticker price. H2 750 Kaws are 5000 and up if you want anything nice, and restored 69 H1 500s are approaching 20,000!
New Old Stock exhaust systems for CB750s, and Z1 900s are close to $2000. Give the 70s street bikes that are high valued now 10 yrs and your gonna wish you had bought 15 of them. Body kit for an H2 Kaw is $1500 easy, new original paint. you can spend $300 on a gas cap.
yes they are headed for hyperspace, so find the bike you always wanted now, because in 10 yrs your not gonna touch one.

Anything pre 1975 that is in very good condition has gained value. That goes for all Japanese motorcycles or avacado and coppertone refridgerators. The condition determines the value. "Just an old bike" is just an old bike. When I first began selling motorcycles in 1972 a 750 Honda was $1195. A real nice '72 750 Honda today is worth $2000 or so. That's a gain! However, a 1972 Honda 750 that is partly original and beat up is worth $200, maybe. The market is always strong for old nice stuff. Tops on many wanted lists are the Kawasakis 900 and 1000 from the mid '70s. Kawasaki's 2 stroke triples are very hard to find because most were crashed trying to do stupid stuff like...turn. They were fantastic straight line machines. The Harley Topper scooter was always a piece of crap but a good one today is valuable. Britsh bikes from that time frame are in demand in fine condition. The Suzuki 750 "Water Buffalo" was never in demand, then or now. OK, there are maybe five old nerds that would like to find one. Nice Yamaha XS models sell very well today in nice condition. Anything old that is nice sells for more than it did when it was new.

It depends on the bike and condition but overall, yes.
69 -74 Honda CB750's are huge bucks now.
Same vintage Kawi 500 and 750 two stroke street bikes are in demand.
