For the best undrafted player ever, I'd probably go with either Joe Jacoby or Kurt Warner. I know Warner had a short peak, but his story was like something out of a movie. Jacoby was one of the Hogs for the Redskins during the 1980s, and put together an amazing career that included three Super Bowl wins.
Of current players, I think Gates, London Fletcher and Jeff Saturday deserve consideration. Oh, and I guess Vinatieri has done pretty well for himself with those Super Bowls, too.

Wow! Well, there have been some GOOD ones to come in the last round and even more to not even be drafted. Here are a few: Antonio Gates, Tony Romo, Willie Parker, Lawrence Tynes, Donald Drives (7th round), Wes Welker, and Marques Colston. These all since the 1999 draft. I have to say the best of the group is Antonio Gates.

Rod Smith WR for the broncos Undrafted and he is the all time leading receiver in many categories for undrafted players. Also Antonio Gates was undrafted

he was undrafted, and if he hadnt gotten injured,
he would still be playing now, probably upwards 10,000 yards
if you look at his stats in KC, he is the REAL deal.
quickness, hands, blocking.
wasnt a power back, but an elite back

I see alot of current players being listed, but for me, I have to include some names that most people have never heard of.
After all, the NFL has been around for a long time:
10) Kurt Warner QB (Northern Iowa) - Taken as an undrafted free-agent by the Packers in 1994 and was cut before the season started. Was bagging groceries when the Rams signed him.
9) Larry Little RG (Bethune-Cookman) - Signed as a rookie free agent by the Chargers was let go because of weight issues. Signed by the Dolphins, lost 20 pounds, and helped the 72 Dolphins go undeafeted.
8) Warren Moon QB (Washington) - 1978 won the Rose Bowl, but went undrafted because teams wanted him to be a WR instead, he refused. He went to the CFL and won 5 consecutive Grey Cups. In 1984 the Oilers signed him. 49,325 yards passing yrds(4th best in history). 17 Seasons. 9 Pro-Bowls. He was also the first African-American quarterback inducted into the Hall of Fame.
7) Willie Wood QB (USC) - He was only 5-foot-10 and 160 lbs and no one wanted a QB of that size. Vince Lombardi took a chance on him and signed him as a Safety. He bulked up and became a starter in his second season. 5 Championships. 8-Time Pro Bowler with 48 career interceptions. inducted into the Hall of fame in 1989.
6) Adam Vinatieri PK (South Dakota State) - I think we all know who this man is.
5) Emlen Tunnell DB (Iowa) - 79 career interceptions. 9 Pro-Bowls. first African-American enshrined in the Pro Football Hall of Fame in 1967.
4) Antonio Gates (Kent State) - I don't list his Position for Kent State, because: He signed with the Chargers in 2003 even though he hadn't played football since his senior year in high school.
3) Marion Motley LB (Nevada) - He played his first 2 seasons in Cleveland as a Linebacker then switched over to FB. 5.7 yards per carry as a FB. Hall of Fame in 1968.
2) Willie Brown DB (Grambling) - Signed by the Oilers and used as a TE/DE then cut. Went to the Broncos, cut. Signed with the Raiders. Lockdown corner that went to 4 Pro-Bowls and collected 54 career interceptions. He is best remembered for his 75-yard interception return for a touchdown in Super Bowl XI, as the Raiders crushed Minnesota, 32-14.
1) Dick "Night Train" Lane DB (Scottsbluff Junior College) - After four years in the Army, Lane was just looking for a job when he walked into the offices of the Los Angeles Rams and asked for a tryout. Just months later, he set an NFL record with 14 interceptions in just 12 games – a mark that still stands today. Lane left a huge black and blue mark on the game as his signature move, the "Night Train Necktie," forced the league to outlaw tackling players around the head. He also went to 7 Pro-Bowls and intercepted 68 passes in his Hall of Fame career.

Reggie White, as with several others, never entered the NFL draft to go to the failed USFL. When it folded, there was a supplemental draft for these players. Hershal Walker is also one of these guys.

I don't know all time but Marques Colston in the 7th round was a pretty good pick.
