You will get some different answers on the various sites with history of this celebration, but the most logical answer would be from the original greenery people used to decorate--holly with green foliage and red berries.

I think it goes back to the traditions of "Yule", and bringing in evergreen things during the winter solstice to celebrate life in the "dead of winter".
