If you like museums, go to one:

Afterward, go to one of the local small 'cafe's' (the local version of a pub,) or if you are there in summer, find yourself a seat on a canal-side 'terras' (outdoor sitting for a cafe.)
Have an Indonesian Chinese Rijst tafel, (dinner, buffet style, with many different dishes.)

End the evening with a movie, show or concert.
Almost all movies in the Netherlands are in the original language with subtitles, so you can follow what is going on.

why not take a train to a totally different town?? go to Rotterdam if you are into modern art, loads and loads of museums there, only a short train ride from amsterdam, go to Den Haag, parlement resides there and also the buildings are amazing, such nice architect and lots to see also a short train ride from amsterdam, not sure what time you are planning on traveling to holland again, spring ,summer or this winter cause if you come during spring/summer time there is more to see and to do since most parks open up than, than you must come and see the keukenhof, a big flowerpark with all our bulbs blooming, amazing site i hear, as a dutch person i almost feel imbarrised to say i never been there yet. but also another cute town is Volendam, very dutch, a typical fishing town with loads to see for tourists.

but if you insist on staying in amsterdam, take a boat ride on the canal at night, very special with all the lights.

If you're not squeamish, the Torture Museum is completely fascinating; just amazing to see what depths the human soul can sink.

You've probably already been to the Van Gogh Museum, but I always go there for a shot of culture.

Rent a bike, grab and map and tour the city.

Anne Franks house is a great choice if you enjoy WWII- you may try reading the book on your way there so you can throughly enjoy the experience.
I've never been to Corrie Ten Boom's home before but i've heard it's sensational!

visit a cuckoo clock museum...lol really
my brother went to europe over the summer and part of his trip was in amsterdam...also maybe a chocolate factory...?

get stoned in the coffee shops and skip down the cobbled streets and find yourself a nice long legged lady for hire..
