EDIT--- if the answer really is "he won't cheat", then the lyrics make no sense. "I would do anything for love, but I won't do that" ---Well cheating isn't a thing for love, so why does he even count that when singing to his main squeeze?

My guess is that it's one of those situations where the artist intends for the listener to insert whatever "that" means to them into the song in their own minds, or at least get them thyinking. Sometimes ambiguity is deliberate.

In the line, "I will do anything for love, but I won't do that," the "that" is whatever he said just before that. For example... "But I'll never forget the way you feel right now-- Oh no--no way-- I would do anything for love, But I won't do that" - The "that" in this particular verse is "forget the way you feel right now." Meat Loaf said this himself on his StoryTellers episode on VH1

I always wondered that too. I always thought it was like an inappropriate sex act or something embarassing, or like a sacrifice like not being able to not leave the toilet seat up or something. I'm weird =)
