The field of linguistics is the scientific study of human natural language. It is a growing and exciting area of study with an important impact on fields as diverse as education, anthropology, and sociology.
"as diverse as" - you're saying that linguistics is diverse, and then you are measuring how diverse, by saying its diversity is the same as the fields of education, anthropology, and sociology.
Hope this helps

Translation into little words:
There are a lot of people doing research into how humans talk to each other, this study and research is called linguistics. If you studied insects it would be called entomology. Linguistics is very exciting, and it affects a lot of different fields of study that you wouldn't think would be related like education (teaching), anthropology (looking at how people act with each other and their surroundings) and sociology (the stufy of how humans act with each other in societies).

Well, the word "diverse" it's what's called
a very loaded word in English. Which means
it has many connotations, insinuations,
and implications.
It has many different usages in linguistics,
law, and economics. So don't read too much
into the "meaning" of it.
What those sort of statements usually mean
is the combination of linguistics with language
laboratories are producing some very fast-paced
changes in the way language is taught in schools.

It means that education, anthropology and sociology are very different or not alike. Language might help to make sense of these subjects.
Actually this statement is an example of what it is trying to help - big words to explain simple ideas.

'As diverse as' means 'as wide-ranging as'.
For example, your friends in Japan come from all levels of society. They come from lives as diverse as students, office workers, farmers, and public officials.
They come from places as diverse as Kyoto, Tokyo, Nagasaki, and Kobe.
'As diverse as' is just another way to mention a large spread of possibilities.
