It is a lot like cop shows. They are occupations that lend themselves well to drama, as they deal with life and death, and can have a constant rotation of problems to keep the show from getting stale. They are also slightly glamourous jobs, which seam mysterious to people unfamiliar with them, so if is SEEMS plausible and looks really cool, then it will hold a viewer's intrest.

Medicine is one of those career paths that we are taught to aspire to (at least a little). It's important and difficult and just working in that field usually speaks volumes about who you are (albeit on a superficial level- being a doctor or a nurse isn't all that the person is).

Most people can't or don't want to be in medicine (or decided it wasn't for them) but they are at least a little bit interested so we watch the shows, even when we know they are dramatizations of what these career paths are like.

Personally I love E.R., it has the right mix of medical and human drama, without being as whiny as Grey's, even though I used to watch the latter religiously as well.
