when a hacker jumps from one telnet server to another in order to hide his tracks? What's the actual term/slang term for that?

Chaining.
Its used in many things. Such as phone calls. We have all seen the tv shows where they show the call being routed thru different countries when the officials are trying to track it.

It can be telecom chaining or proxy chaining or server chaining.

It sounds like you're referring to a string of proxy servers. Good telnet proxies are hard to find and getting rarer these days. Go figure.

You can't just jump from one server to another, this will close your telnet connection to your host. You need to telnet to one, then from that one you telnet to another, and another, and again until you feel safe. Of course this is all nonsense because telnet is so easily traceable.

Check this site out, it's a good place to play around without getting in trouble. http://www.hackergames.net/

Don't even think about trying to do any illegal hacking or cracking - you're talking serious jail time and with the tools the feds have it's almost 100% certain you'll get caught no matter how good you think you are.
