I quite enjoy using leftovers creatively to produce an appetizing meal, sometimes by the judicious addition of fresh ingredients.
Mind you, I am a war-baby, so my family call me, because I hate wasting food. I am not averse to using food well past its sell-by date, as long as it is not actually spotted with green or pink fluff. I saw a TV item recently about how children in foreign parts whose only means of feeding themselves is by scavenging on rubbish tips. They weren't poisened at the first mouthful, and in fact had well-developed immune systems which enabled them to thrive in conditions where we Westerners would assume they would suffer from digestive problems at one end or the other within minutes or hours!
I'm the one in the supermarkets who goes for all those cheap offers that have reached their sell-by dates. I take them home and store them for a few more days in the fridge (because I buy too many to be able to eat them all in one day). I can honestly say I never suffer from upset tummy as a result. Fat tummy - yes, diarrhoea - no.

I suspect that this "sell-by" labelling is sometimes just a marketing ploy to make fussy eaters throw out the old and buy more.
