Why don't you just invite his father to say the blessing, not only do you escape the stress of saying it yourself, you are being a good host as well. And you can phrase it as such, "Since you are my guest, dear father-in-law to be, would you honor us by giving the blessing?" If you think that he would feel put on the spot and you have a good relationship with him, speak to him before the time arrives and let him know you intend to ask him, giving him an opportunity to gracefully bow out. In that case, a backup plan where you thank God for the food and the family and friendship should be simple enough.

But here I am with this lovely big dinner!
I love all the cakes, the jelly, the pies
And here's this roast turkey with tremendous fat thighs!
