What do you mean 'still' packets have been around for.. 100 years now. At least I can not remember they were not here.
Like most of these 'convenient' products they aren't that time saving. I can whip up a sauce in about the same time as it takes to use a packet. Admittedly I have to use a bit more brain power but that is OK :)
Side note: Do you know that the difference is between icing sugar and plain powdered sugar?
The price and the name.
Packets are overrated.

I rarely use gravy or sauces, but when I do I make my own. I've 'cheated' and used jarred gravies or packaged sauce mixes a few times, and agree with you that they just don't taste as good.
The last time I made gravy was this past Thanksgiving. It's a two day process, sauteeing the giblets, making the stock, and then finishing it off the second day. I made over a gallon of gravy....and didn't have much left over. Gravy for a crowd is fun to do!

I agree with you. You really can't beat the taste.
However, sometimes, I don't have the time to make the gravy, it doesn't happen often, and then I will either make it from a packet or open a can or jar. Some of them taste better than some of my friends can make (did I say that?).

Make my own for preference. Some I cannot make successfully, and have settled for buying an occasional taste at a restaurant that makes it well. The dried packets are just nothing. Occasionally I will use canned or bottled gravy, but only rarely.
Now, pasta sauces: tomato, alfredo, creamy, or pesto...those I make myself. (Once found myself very proud to overhear my stepdaughter telling her circle of friends that "my stepmom makes a killer spaghetti sauce!"

I make my own. Packets just don't contain flavor that can compete with home made! It's so darn easy to make gravy and sauce with meat drippings, why waste money on tasteless packets?!

I seldom make my own gravy. The packaged gravy tastes so much better than mine! I'm not a good cook.

I still make my own.
I'm surprised at the number of people who tell me they don't know how to make gravy. That just amazes me. It's a side to so many meals, I guess in my family you couldn't help but learn.
I still make my own yeast rolls too. Now THAT is even harder to find.

I try to make my own all the time as the ready made ones had to much salt in, but I have seen recently that they have a reduced salt one now, so maybe I might start to use that more often on busy days
