Fresh is best and frozen next.
The nicest thing about frozen: the veggies are already chopped and clean, no salt added and I can keep more of them in the house without spoiling.
We eat lots of vegetables at our house, including dried beans of nearly every kind.

fresh or frozen. Most can veggies taste/feel over cooked but I'll them. Except for peas. I don't like the taste at all.
