Think about isolating x (getting it by itself).

I was taught that the = sign is equivalent to a fence.

so in x-7 = 30, 7 wants to cross over the fence to get with 30.

then x = 30 + 7
x = 37

Whenever you see an equal sign you have an equation. An equation is like a simple balance (scales) used to weigh things. Imagine the two pans, one on each side of the fulcrum center---just like a set of scales.

Maybe it looks like this:

---- ---- Now imagine it as an equation ---- = ----

The left side has to have the same quantity on it as the right side so as to make both sides equal! Sounds simple enough!

So, if you add or subtract something from one side, you have to do the same on the other side, so as to preserve the meaning of the equal sign.

In algebra, such as in the problem you present, the goal is to get the variable ('x' in this case) all alone on one side of the equal sign. So, that troublesome -7 has to be taken off in order to get the lonely x all alone! What if you added 7 to the left side of your equation? Yes! It would 'wipe out' the -7 because they are opposites. Sorta like reacting matter with antimatter: Throw a chunk of matter in with a same sized chunk of antimatter and they both disappear! Doing this in this case makes the x all alone on the left of the equal sign.
Cool, BUT, REMEMBER: WHAT YOU DO TO ONE SIDE YOU MUST DO TO THE OTHER (to have the equal sign make sense), so go ahead and add seven to the right side too. You now have x = 30 + 7
This is the same as x = 37, and we are finished, though it is a good idea to always check the solution, by 'plugging in the number answer (for x) whereever you see x in the original equation:

x - 7 = 30
(37) - 7 =30

30 = 30 which is correct meaning the solution is correct.
