I think bones give more flavor, but bone out makes it easier to eat.

Usually boneless. It's easier to eat, because you can use a fork if you need to, or just hold it easier with one hand if it's like tenders or nugget-size.
However, I think every child should experience the fun of breaking the "wish bone" at least once or twice in life--so for that reason alone, a breast with bone in is a nice occasional treat!
