Metals are good thermal conductors, so if your tongue heat diffuses toward it very quickly, freezing the saliva. It then sticks in much the same way as glue does when it hardens - by forming a bond with high tensile strength.

when you lick the pole the saliva on your tongue attaches to the pole. the saliva freezes and your tounge is stuck.
