In a sentence for example...... "The purple had a hint of red, mind you purple is made of red and blue mixed together so it makes sense".
It means keep in mind or otherwise

mind you can be used in the same context as although.

For example:

I like chicken, although beef is good too.

I like chicken, mind you beef is good too.

Could be dialect dependant as my example relates to the North of England.
