I know the electric ones are called buttons or switches.... but what about the manual ones?

We call them Window Winders.

Wind the window up/down.

Window crank, which operates the regulator, which is the assembly that actually raises and lowers the window glass.

HANDLE is what it was always called. People used to say "Turn that handle and roll up the window."
