I've always heard it falls butter down. I think that's because it's on top and tumbles once in the air. Try putting some butter on the bottom instead of the top before knocking it off and see if it still falls butter down, because I could be wrong, you know.

It depends on the height of the counter not which side the butter is on, because the bread sometimes doesn't have enough time to do a full flip. (We tested it in my science class a couple of years ago)
