For a real good show for families of all ages, check out the Tournament of Kings at the Excalibur. Fantastic show and a pretty neat dinner included. You have to eat it medieval style with not eating utensils. So many free things to see.
At Xmas go to Ethel M's chocolate factory and check out their Xmas display. It is a cactus garden (huge) all decorated in Xmas lights.
Plan your return with friends when it is warmer. Better for 21 yr olds. Pools open and better to walk around and enjoy the scenery.
Take the vacation as planning for next year and pick up all the free magazines and coupon books you can find to help prepare your next visit.

I have been to Vegas a hundred times in my 55 years and it has gotten better and better. All the hotels are catering to your parents age group and the kids so you will have a blast! You can spend two days just walking around and checking out everything. Go to Cesar's palace shopping along with the other things everyone else has mentioned.
There was a place just off the strip that taught ski diving in a vertical wind tunnel. At the time it was $35, now I don't know but it was well worth the money for the fun.
The Blue Man Group is great also. If you can afford it get into the poncho section. It is about $100 but well worth it.

Casino by law are for people 21 and older. There are some family activities but you are in the catch age group where there is not that much to do. Go to www.lasvegas.com or www.vegas.com and you can find things to do. What? Movies/Orleans, rollercoaster/NYNY, skyrides/Stratosphere, Bowling/Orleans, Arcade games/Circus, etc. But you cannot go to the night clubs or strip clubs. You can go to most shows but you have to be 21 to drink or gamble. You cannot hang in the casino.
Buffets are great family places to eat. I would recommend if you have younger family members for everyone to go to Mystere at Treasure Island or jousting dinner show (only one) at Excalibur.
There are some fun museums - Madame Tressaua at Paris plus a ride up the Eiffel Tower - Test Site Museum on E Tropicana, Natural History Museum at UNLV.
There is always the Hoover Dam tour or the free Freemont Experience (outdoors) downtown at night.

You will never be bored in Las Vegas. No matter your age. Not only is it affordable, and very luxurious but full of activities. You don't have to gamble or have a lot of money to have a great time.
